This is a recipe that I made for an event at a local senior center where I volunteer. The event involved an interactive movie where we made a southern style dinner including fried green tomatoes, bar-b-que pork, a scrumptious scalloped corn dish, candied sweet potatoes, coleslaw, green bean almandine, and peach cobbler for dessert. In order to feed the number of people we had at the event, I needed to multiply this recipe times five. Ingredients Needed From Scratch 6 Large Sweet Potatoes 1 Cup Dark Brown Sugar 3 t Ground Cinnamon ¼ Cup White Sugar 1 stick butter 2 C Miniature Marshmallows 2 tsp Salt Utensil/Cookware Needed Potato Peeler Sharp Knife Sauce Pan Fork Colander (Strainer) Baking Dish Directions Peel sweet potatoes and cut into 2 inch slices. Put in saucepan and cover with water. Add 2 tsp salt and ¼ cup of white sugar. Cover and boil approximately 30 minutes until potatoes are tender (prick with fork for tenderness). Drain. Preheat oven to 350 degrees. Place potatoes in a baking dish and sprinkle with brown sugar and cinnamon. Cut butter into pats and place on top of potatoes. Bake for 20 minutes. Pull out dish and sprinkle with marshmallows. Place potatoes back in oven for a few more minutes until marshmallows are brown. Serves: 6 Easy Dish Use 3 cans of yams in place of the fresh sweet potatoes. Follow the baking directions above. |
